I'm going to level with gathering professions but I'm not sure which to pick yet. Seems like everybody has skinning, so I might go mining and herbalism.

Leveling will be skinning/herbalism, once i reach 60 i will drop skinning for tailoring and craft https://classic.wowhead.com/item=14154/truefaith-vestments i will then drop tailoring for engineering and end up herbalism/engineering.

I think players tend to go skinning + mining or herbalism since it's easy. You're gathering off the corpse of the mob you just killed and vendoring most of the mats. Doing mining and herbalism together will force you to alternate between Find Herbs & Find Minerals to locate notes on your mini-map, not to mention there's more competition for nodes than for skinnable corpses.
Mining and Engineering at start, then I'll switch Mining to Blacksmithing. I want that oh so sweet Arcanite Reaper.

I would like as much practise using the Engi items as possible so I will take it while levelling up.
Leveling alchemy is down to a science now and not difficult to do in a day or two. I'll start with two gathering professions and eventually have multiple transmute specced alchemists hoping to get multiple Arcanite Bars going a day. Money will be tight for a long time.
