Competitive PvE or PvE?
I've found that fear ward in PvP was really not that great. Stoneform was the real sell for PvP priest (anti-blind and anti-viper sting) along with Desperate Prayer. Whenever I put on a costume people would try to blind me (and fail), but whenever they could see I was a dwarf they wouldn't even spend the reagent to try.
Unfortunately Night Elf Shadowmeld is not expected to give cast protection as that was removed prior to 1.12 or else it would be much better for PvP. It is still nice for stealthily drinking, but not very offensive or combat oriented.
Overall I would say if you're playing for PvE, you aren't missing out on much except that your guild will have their own ideas about you sacrificing good looks for lazy tanks. If playing for PvP, you'll more often wish you were dwarf. Especially if shadow priest. Fear ward is a good way to get guilds to give you shadow gear/take you to raids over the elf shadow priests.

Hmmm, well assuming healing, NE can be very good for that. It can make it so that you're not the first one targeted in a team fight because you're invis drinking when it starts.
This is a lot like that line, "it's only healthy if you eat it", well your character's only going to be fun if you play it, and when I picked characters I didn't like I just ended up not playing them.
And truthfully, I would suspect that a lot of people who are playing a min/max combo actually just like the way their character looks and because it is "the best" they get to brag about it. They're not hurting to play those combos and would probably be torn if the opposite combo was the way to go.

You yourself should know best what playstyle will suit you the most.
Funnily enough I had the same problem with choosing between Priest, Warrior and Druid. Druid was my first 60 in Vanilla, then I tried tanking as Warrior. I liked the fact that I occasionally had to be the one to lead and mark everything, get to know the fights through and through and that I am the one receiving the hits for others. Tanking was lot of fun although I came to realize that it is not the most suitable roles for me as I don't like to have that kind of responsibility all the time. Priest seems like the best choice for me as I haven't experienced that class as much and is likely to be very fun to play.
I am not 100% decided yet but that is because I am still not sure about how I'm gonna approach the game regarding time investment and extent of competitive play.

Much the same here. I'm still very unsure what to go with, but I am still leaning Horde, Orc Shaman.
Enhancement, of course, at least outside of raiding since I don't think anyone will take me if I don't go Restoration.
So I will have to go Restoration in order to get Enhancement gear too. There's a lot of work to be done if I want this 'dream' to be true.
It feels like I change my mind every week/day!
Level a Hunter / Mage for my first character to farm gold & 'attempt' first server 60.
Then level a Rogue / Warlock so I can plague the enemy like the villain I am!
Lastly level my main, a Warrior (Tank) to jump into PvE progression.
My biggest issue is deciding on Faction. I played Vanilla as Alliance & switched to Horde at the pre-patch of Burning Crusade. Been there ever since!
Torn between sticking with what I know (Horde leveling) or jumping ship for the Nostalgia (Alliance).

What to go with first...
Things to consider:
1. Playing with a buddy? Do you want a healing/hybrid/slow leveler class? Play them with your buddy first! Level that hunter/warlock/fast leveler alone!
2. Launch day? First few weeks? Play someone who can tag mobs! Mage/Paladin/Shaman/Druid all good picks. Leave the Warlock and Priest for later.
3. Professions? First character? Consider giving them profs that will help both them and characters that come after them. Tailoring for gear/bags, leatherworking if you're making several leather classes, alchemy to pass out the lower level pots and things you made to level, etc. Leave Blacksmithing and Enchanting for later.

I'll roll warlock. Loved it up until LK and it was decent in Cata (when I quit for good). Just plain fun to play, love operating with dots, pets are handy and the class is cool all-in-all.
I'm leaning towards Warlock. Not sure about faction yet, but probably Horde. Orc for Horde or Human for Alliance. If I go Alliance, I'm also considering Paladin, but we'll see. I remember helping my brother get his Dreadsteed on his Warlock back in Vanilla, and I would love to do that questline again. Priest also sounds tempting for Benediction/Anathema. I just loved class quests back in Vanilla, would love to be apart of them again. Mained Warrior, still fondly remember getting my Whirlwind Axe.
My main will be an Orc Enhancement Shaman. People tend to try to talk me out of it but I don't care. I really can't wait to start leveling my shammy and doing all of those crazy totem quests.
I won't mind healing through dungeons so I hope to be accepted into a bunch of dungeon runs because they are one of my favorite things about classic.
My 2 alts will be a Priest (undead or troll not sure yet) and a Tauren warrior (more than likely for tanking dungeons)

If you are sure you will enjoy the playstyle of enha shaman then go for it no matter what people tell you. I personally am thinking about joining a more casual guild or at least not hardcore one. I feel like it takes away the fun regarding meme specs and all sorts of flavourful moments. To hell with minmaxing. I've seen too much of that on private servers and it doesn't bring me true joy.
I think I am going to be a Troll Hunter or NE Hunter depending on which faction I play. I don't have a ton of time to play and Hunter a relatively easy and solo-able class to play. Plus it's just a blast to wander the wilds doing quests all alone.
I've made kind of a little plan on which classes I'll play. Let me know what you guys think. Note: I will play on a PvP server.
1. Main - Shaman Enhancement Orc - Herbalism Alchemy
I have always mained a Rogue on retail, but plan on making a Shaman my main in Classic. This is because I would like to heal in raids later. I've never raided in Vanilla/TBC and I don't want to be tied to DPS. Herb/Alch seems like a good option because I could sell potions anytime for some profit and benefit myself if I want to. I can also yield potions to alts later if necessary. My idea is to level as Enh and spec to Resto around level 58 to start running dungeons and gather pre-raid gear. To provide for a lvl 40 mount, it might be useful to sell potions or herbs - I don't mind grinding.
2. Rogue Combat Orc - Mining Engineering
Ofcourse I can't stay away from Rogue for too long. So I will be making an Orc for PvP purposes (stun reduction). On this toon I plan to do some WPvP and battlegrounds. I know Engineering is expensive, but I can take my time leveling, pickpocketing and will take it easy with this one.
3. Priest Shadow Troll - Tailoring Enchanting
Everyone tells me it's nice to have a supporting char that can provide with bags and could serve as a kind of bank-char. That will be my priest. Eventually I will level it and then the tailoring and enchanting could provide nice perks. Nothing special, and might use it to either focus more on PvP (shadow) or become a healbot.
4. Hunter Beast Master - Skinning Leatherworking
I've recently leveled a hunter on a private server and must say I enjoy it a lot. It levels quick and having a pet around is pretty fun. Also the leatherworking could provide the char itself, or I could sell hides if prefered.
